HONEY

Our honey is produced in 3 jar sizes:

• 1 lb (454g)
• 12 oz (340g)
• 1/2 lb (227g)

Although we make mostly runny honey, we also have naturally crystallised and soft-set honey. Soft-set honey has a smooth, semi-solid consistency similar to margarine and can easily be spooned out. Naturally crystallised honey is more solid.

All natural runny honey will crystallise eventually. Where the nectar collected by the bees contains a high proportion of fructose, it will stay runny for a long time. Where it comprises a high proportion of glucose, it will crystallise quickly. Crystallised honey can be returned to a liquid state by warming gently in a pan of water with the lid loose.
